Aunt Sarah’s Irish Soda Bread Recipe (old family recipe from Ireland)
Ingredients: 4 cups flour; 1/4 cup sugar; 1 tsp salt; 1 tsp baking powder; 1/2 cup margarine; 2 cups raisins; 1 1/2 cups buttermilk; 1 egg; 1 tsp baking soda.
Cooking Process: Mix flour, sugar, salt and baking powder in a large bowl. Cut in margarine. Stir in raisins. Combine buttermilk, egg and baking soda in a small bowl. Stir milk mixture into flour mixture until just moistened. Separate dough into 1 big lump or 2 medium lumps and place on baking pan covered with parchment paper. Cut crosses into tops of the bread.
Cooking Temp/Time: Bake at 375 degrees for 30 minutes. Bake at 325 degrees for 10 minutes. Bake until bread is brown and knife comes out clean.

'Danny Boy' was my late father's favorite. My paternal Irish grandparents were émigrés to England. It is like an informal national anthem (Waltzing Matilda ~ Australia; 'Jerusalem' ~ England etc...) so we grew up with it.
Currently working on perfecting a challenging jazz piano interpretation, a transcription (Transcription Sizuku "Tokyo Sole 2002") of Danny Boy played by the truly mighty Keith Jarrett.
